Blueberry Muffins

Ingredients
Step 1/8
Preheat oven to 356 degrees Fahrenheit (180 degrees Celsius). Line a 6 cup jumbo muffin pan.
Step 2/8
- ⅛ cup buttermilk
 - ⅓ egg
 - ⅔ tbsp vegetable oil
 - ⅔ tbsp butter
 - ⅓ tsp vanilla extract
 
In a small bowl, combine the wet ingredients.
Step 3/8
- ⅜ cups flour
 - ½ tsp baking powder
 - ⅛ tsp baking soda
 - ⅛ cup sugar
 - ⅓ pinch salt
 
In a large bowl, combine the dry ingredients.
Step 4/8
- ⅓ lb blueberry
 
Add the wet ingredients to the dry ingredients. Fold in blueberries.
Step 5/8
Add equal amounts of batter to the 6 cup jumbo muffin pan.
Step 6/8
- ⅓ tbsp flour
 - ⅔ tbsp sugar
 - ⅛ tsp ground cinnamon
 - ⅓ tbsp butter (cold)
 
In a small bowl, combine flour, sugar, cinnamon, and butter to make a streusel topping. Mash together with a fork or your hands.
Step 7/8

Add the streusel to the top of the muffins.
Step 8/8
Bake muffins at 356 degrees Fahrenheit (180 degrees Celsius) for 25-30 minutes or until golden brown edges. Let rest for 15 minutes before eating.
