Coffee & Walnut Tray Cake

- 26⅔ g butter (soft)
 - 26⅔ g sugar
 - 26⅔ g flour
 - ½ eggs
 - ⅛ tsp instant coffee powder
 - 6⅔ ml water (lukewarm)
 
- hand mixer with beaters
 
Heat oven to 180C and make sure there’s a shelf ready in the middle. Line a 20x30 tray with baking paper. Beat the butter, sugar, flour and eggs with the coffee (mixed with the boiled water, then cooled) and a pinch of salt until creamy.

- 6⅔ g chopped walnuts
 
Stir in the chopped walnuts.

- 1⅔ g walnuts
 
- baking tin
 - oven
 - wire rack
 
Spoon the mix into the tray and top it with the walnut halves. Then bake for 18-20 mins until light golden and springy. Cool for a few mins in the tin, then lift the cake out and cool on a rack.

- 1⅓ g confectioner’s sugar (for dusting)

When cooled completely, cut the cake into squares and place on a plate, ready to serve. You can also top the cake squares with confectioner’s sugar, if you like.
