 - ⅛ lemon
 - 8⅓ g butter
 - 8⅓ g honey
 - 8⅓ g sugar
 - ⅛ tsp salt

Preheat the oven to 160°C/320°F. Zest half of each of the orange and lemon. Melt the butter in a small saucepan over a low heat. Add the honey and sugar and stir to combine. Add the orange and lemon zest and a pinch of salt. Set aside.

Add the sliced almonds and mix.

Place the mixture by the tablespoonful on a baking sheet lined with parchment paper. Bake in the preheated oven at 160°C/320°F for approx. 10–15 mins. until golden brown. They will spread slightly, so avoid overcrowding.

 - 6⅔ g white chocolate
 - flaky sea salt

Meanwhile, melt the chocolate in a double boiler or carefully in the microwave. When the Florentines are still warm, use a round cookie cutter or spoon to shape them. Dip the corners and cookie base in melted chocolate as desired and sprinkle with some flaky sea salt.
