Juicy air fryer salmon and vegetables

- 1 red bell pepper
- ½ zucchini
- ½ eggplant
- 1 onion
- ½ stalk leek

For air fryer salmon with vegetables, first cut bell pepper, zucchini, and eggplant into small cubes. Then, slice onion and leek thinly.

- 8 leaves mint
- 1 clove garlic
- 2 sprigs rosemary
- 2 sprigs thyme

Marinate the sliced vegetables in a large bowl with olive oil, mint, crushed garlic, rosemary, thyme, salt, and pepper.

- 20 g slivered almonds
- 1 lemon
- 2 air fryer parchment papers
- air fryer
Distribute the vegetables over two sheets of parchment paper. Cut salmon into portions and place on top of the vegetables. Sprinkle with salt and almond slices. Place lemon slices on top. Fold parchment paper over and air fry for approx. 15–20 min., at 140°C/2800°F. Cut the parchment paper open at the top and open slightly to serve.
