Leftover Rotisserie Chicken Fried Rice

- 1 cup mixed vegetables
 - ¼ head onion
 - 2 cloves garlic
 
- knife
 
Thinly slice garlic; dice onion; Cut all your veggies into small pieces.

- 1 tbsp olive oil
 
- nonstick pan
 - spatula
 
Heat oil on medium in a nonstick pan. Toss in onion and garlic (if you have some herb, this is a good time to extract its flavor to the oil-I threw in some thyme that goes well with the chicken). Cook until fragrant.

- ¼ rotisserie chicken
 
Shred rotisserie chicken with your hand while adding it to the pan. Be careful to remove all bones.

- 1 cup rice
 
Add raw mixed veggies into the pan with chicken, stir fry on medium low for 2 minutes or until any released moisture is gone. Then, add cooked rice and frozen veggies (if any) and continue stir-frying for 3-5 minute. Make sure all ingredients are well mixed and cooked.

Serve in a plate or bowl. Don’t forget to top with sesame seeds!
