Red Lentil Vegan Dhal

Step 1/4
- 2 tsp coconut oil (for frying)
 - 1 onion
 - 4 cloves garlic
 - 10 mixed mushrooms

Place oil in a frying pan at medium-low temperature and sauté the diced garlic, onion and mushrooms until soft.
Step 2/4
- 1 scoop red lentil
 - 4 scoops coconut milk
 
- liquid measuring cup
 
Add lentils to the pan and mix for three minutes before adding the coconut milk.
Step 3/4
- ½ red bell pepper
 - 1 tsp smoked paprika powder
 - 1 tsp ground turmeric
 - 1 tsp ground ginger
 - 2 tsp salt
 - 1 tsp ground cumin
 - 4 bay leaves
 
- cooking spoon
 
Add red pepper and spices, including bay leaves into the pan.
Step 4/4
- ½ lime
 - 2 tbsp soy sauce
 
Bring it to a boil while stirring occasionally until soft. Add soy sauce and stir. Take it off the fire, serve and add lime juice.
