Yellow curry split pea soup

- ½ onion
- 1½ cloves garlic
- 5 g ginger
- cutting board

Peel and finely chop onion, garlic, and ginger.

- 2 tbsp vegetable oil
- ½ tsp tomato paste
- 1 tsp curry paste
- ½ tsp ground cumin
- ½ tsp ground turmeric
- ½ tsp ground coriander
- ¼ tsp cayenne pepper
- ⅛ tsp ground cinnamon
- ⅛ tsp ground allspice

Heat oil in a large pot, then add onions, garlic, and ginger. Let cook, stirring constantly. Then add tomato paste, curry paste, cumin, turmeric, coriander, cayenne pepper, cinnamon, and allspice.

- 210 g yellow split peas
- 400 ml vegetable broth
Add split peas to the pot, then add vegetable broth. Cover and let simmer over medium heat for approx. 1 hr. If the soup is too thick, add water or more vegetable broth.

- 100 ml coconut milk
- ¼ lime
- salt
- pepper
- chili flakes (for serving)
- cilantro (for serving)
Stir in coconut milk and lime juice. Season with salt and pepper. Serve with more coconut milk, chili flakes, and fresh cilantro. Enjoy!
