- 2 tbsp olive oil
- 1 tsp sea salt
- 1 tsp garlic powder
- 1 tsp smoked paprika powder
- ½ tsp pepper
- ½ tsp onion powder

Start with preheating the oven to 190 C. Prepare the rub for the riblets by mixing the oil, smoked paprika, salt and pepper, onion and garlic powder.

- 2 cobs sweet corn

Chop the corn into quarters. Best to cut them in half and then into quarters.

Rub the mix on to the corn riblets and place them on a baking tray lined with a baking paper. Put the tray into the pre-heated oven for 15 min. Check after 10 min to see if they are browning.

Prepare the mayo dip by mixing mayonnaise with chipotle powder.

Voila! Let it cool a bit before serving. Serve with cilantro, lime wedges and spicy mayo for dipping.
